French Onion Soup with Shaved Swiss Cheese 

Swiss Cheese Recipe Ingredients:

 * 1 tablespoon olive or vegetable oil
 * 3 pounds yellow onions, stripped and julienned
 * 1/3 cup whiskey bourbon
 * 2 quarts meat stock
 * 1 quart chicken stock
 * 1 tablespoon in addition to 1 teaspoon new lemon juice
 * 1 1/2 teaspoons salt
 * 1 teaspoon newly ground white pepper
 * 1 teaspoon hot red pepper sauce
 * 1/2 teaspoon Worcestershire sauce
 * 1 cup newly ground Swiss cheddar

  Swiss Cheese Recipe Instructions:

 In a Dutch broiler or huge, weighty pot, heat the oil over medium-high hotness. Add half of the onions and cook, blending, until dull brilliant brown and caramelized, around 15 minutes. Add the excess onions and cook, blending periodically, until a profound caramel tone, around 60 minutes. Add the whiskey and cook, blending once in a while, until dissipated, around 5 minutes.
