Swiss Chicken Recipe Ingredients :
2 tbsp. spread
2 tbsp. vegetable oil
1 (2 1/2 to 3 lb.) chicken, quartered
1 sm. onion, hacked fine
1 clove garlic, hacked fine
1 1/2 c. chicken stock
2 tbsp. Dijon mustard
1/2 tsp. dried tarragon
1/4 lb. cut child swiss cheddar
Swiss Cheese Recipe Instructions
In a 10 to 12 inch skillet, heat spread and oil and earthy colored chicken on all sides. Dry each piece of chicken well prior to putting in skillet. Pour off everything except 2 tablespoons of fat. Add onion and garlic and saute 1 moment. Add stock and scrape up any earthy colored bits from skillet. Mix in mustard and tarragon. Return chicken to skillet, cover and stew gradually, turning chicken two times, for 35 minutes.
Around 3 minutes before definite cooking is done, top each quarter of chicken with a cut of swiss cheddar. Move chicken to a warm platter. Skim off overabundance fat on sauce and raise heat under the skillet. Bubble energetically, mixing continually until sauce is thick and sugary. Spoon sauce over chicken. Serve right away. Cool.
